Makes about thirty-six 2 and a half inch cookies.
Preheat oven to 375 F
Grease or line two cookie sheets.
Wisk together 1 cup plus 2 tablespoons ap flour and 1/2 tsp baking soda
In another large bowl beat until well blended:
1/2 cup unsalted butter
1/2 cup sugar (preferably caster for those in the UK, or superfine in NA)
1/2 cup packed light brown sugar
Add and beat until well combined:
1 large egg (preferably free range/organic=my recommend.)
1/4 tsp salt
1 1/2 tsp vanilla
Stir in the flour mixture until well blended and smooth.
Stir in: 1 cup choco chips
(Optional: 3/4 cup chopped walnuts or pecans)
Drop
the dough by heaping teaspoonfuls about 2 inches apart onto the cookie
sheets. Bake, 1 sheet at a time, until the cookies are just slightly
coloured on top and the edges are brown, 8-10 minutes. Let stand
briefly, then remove to a rack to cool.
